Recipe for Breakfast Cookies

I have always been a huge fan of breakfast cookies, especially when they involve chocolate.  What better way to start the day then with a cookie?

I found this recipe on one of my favorite cooking blogs, Cooking During Stolen Moments.  However, I've made a couple of changes.  I cut out 1/3 of the sugar, and added chocolate chips.  I also use half oil and half applesauce, substituted whole wheat white flour for the regular flour, and added walnuts for additional protein.  These are perfect for Josiah when he is biking to school early in the morning and wants to wait to eat until after arriving at school.

We have found that the way we like them best is frozen!  I cut them up, put them in the freezer, and eat them frozen with a cup of coffee for breakfast.  This insures that they don't get stale, and for some reason I've always liked my cookies better frozen, unless they're freshly baked.  These cookies are much more filling than a bowl of cereal, and tastier too, in my opinion!

Breakfast Cookies

  • 4 C. oats
  • 1 1/2 C. white whole wheat flour (I use King Arthur brand)
  • 1 C. brown sugar
  • 1 t. cinnamon
  • 1/2 t. salt
  • 1/2 C. vegetable oil
  • 1/2 C. applesauce (unsweetened)
  • 4 eggs
  • 1 C. chopped walnuts
  • 1 C. raisins
  • 1 1/2 C. chocolate chips (or white chocolate chips and craisins, or peanut butter choc. chips, etc)
Cream together the brown sugar and eggs with a mixer.  And eggs, mix again.  Add flour, cinnamon, salt, veg. oil, applesauce, and mix.  Stir in oats, walnuts, raisins, and chocolate chips.  Cook in 13 x 9 casserole dish (flatten with wax paper) and bake at 350 degrees for exactly 23 minutes (in my oven).  You may want to watch them the first time...they just aren't as good if they're over-baked!
